Requiring only 6 ingredients and 10 minutes to make, this is the perfect vegan breakfast recipe for busy mornings! It’s sweetened with dates and has a terrific peanut butter + chocolate flavor with enough sustenance to carry you through a whole morning of errands.


I love delicious foamy lattes. When T and I travel, heading to a cafe for a hot cappuccino is the first thing on our daily to-do list. It’s pure joy.

But, up until this past Christmas at least (Thanks Mom + Dad!), we didn’t have one of those fancy espresso machines / milk steamers in our house and thus, lived a foamy latte-less life on the day-to-day.

That is, until a few months ago when I realized you could totally recreate that foamy latte texture with a freakin’ BLENDER. My life changed right then and there.

Cut to a couple weeks after that when our kitchen was pretty empty of groceries but I still needed something to power me through a morning of errands, and here we are. The Vegan Peanut Butter Cup Blender Latte became an instant staple in our house!

What’s in this Peanut Butter Cup Blender Latte?

  • Coffee: Make it STRONG (if that’s your thing). We make our coffee in this French press and find it to be the purrrfect amount for this recipe.
  • Pitted Dates: While T can pop these like candy, I’m honestly not a huge fan of dates on their own. BUT, they are an amazing addition to recipes like this because they add a beautifully natural sweetness to your drink. Not to mention, FIBER!
  • Cacao Butter: This adds some satiating fat and a rich chocolate flavor. I’m definitely not a devoted keto-er, but I am totally digging this whole adding fats to your morning coffee thing.If you’re oil-free, feel free to skip this ingredient. But if you’re curious, I encourage you to give it a try! 
  • Full-Fat Coconut Milk: I like using a thick canned coconut milk for a spot of dairy-free creaminess in this recipe, but feel free to use any plant-based milk you dig!
  • Peanut Butter: This is obviously a critical component to any PB Cup flavored drink. If you have allergies, feel free to sub whatever your favorite nut or seed butter is here!
  • Vegan Chocolate Protein Powder: There are a ton of vegan protein powders on the market these days, and not all of them are equal in deliciousnessl. If you, like us, like to stay away from anything with that gross stevia taste, we highly suggest the new Protein Made Simple line from Vega. They have ZERO stevia and a dark chocolate flavor was killer in this recipe. These are on the newer side, however, and we’ve had a hard time finding them in stores. BUT, you can order them on Vega’s website AND Amazon (which is what we do!)

How to Make a Vegan Blender Latte

This Peanut Butter Cup Blender Latte can be yours in 3 simple steps:

  1. First, add the dates and cacao butter to your high-speed blender. Pour the hot coffee over them and let it sit for 5 minutes with the lid on. The hot coffee will soften the dates and melt the cocoa butter to perfection.
  2. Next, add the rest of your ingredients and blend the mixture on high for 1 full minute. A good blender is important here to completely liquify all the ingredients (especially those dates!). We use a Vitamix. If you don’t have a high-powered blender, we suggest using silan, or date syrup (love this one), to sweeten your drink!
  3. When finished blending, the mixture will be luxuriously creamy and a little foamy on top. Pour the coffee straight into 2 large mugs.

Drink the blender latte while hot; we like to add a sprinkle of cocoa powder or cinnamon as well.

The recipe makes 2 servings, which I usually split with T. But, you can totally save and reheat the second serving the next day. (Although, I wouldn’t let it sit longer than that.) It will thicken A LOT as it cools but, once reheated, will regain its velvety delicious texture. To vamp up the foam on Day 2, send it for another spin in the blender as well.

Ingredients
  

  • 1 oz. cacao butter see notes for oil-free
  • 8 pitted dates
  • 2.5 cups strong hot coffee
  • 1/3 cup full-fat coconut milk
  • 1/4 cup peanut butter
  • 3 Tbsp vegan chocolate protein powder We dig this one.

Instructions
 

  • Add the cacao butter + dates to your high-speed blender and pour the hot coffee directly over them. Cover and set it aside to let the cacao butter melt and dates soften.
  • Then, add the remainder of the ingredients and blend on high for 1 minute.
  • Pour and serve immediately. We like to add a sprinkle of cocoa powder or cinnamon as well. See notes for reheating instructions. Enjoy!

Notes

To make it OIL-FREE: Skip the cacao butter.
LEFTOVERS: You can totally save and reheat the second serving the next day. (Although, I wouldn’t let it sit longer than that.)
