  • Creamy Vegetable Soup – For those who like to eat their vegetables cooked in a flavorful dairy-free cream broth, this Creamy Vegetable Soup is the perfect option. Packed with veggies, lentils, and rice, itโ€™s like a whole meal in a bowl! And not a drop of dairy or coconut milk!
  • Tuscan Mushroom Soup – Italian vegetable soup recipes are some of our favorites. They are always just packed with so much flavor. And this Tuscan Mushroom Soup is no exception!   • Spicy Curry Pumpkin Soup – This savory curried pumpkin soup is an easy recipe that can be made on the stove or in the slow-cooker with either canned pumpkin or fresh pumpkin and just a few kitchen staples. Itโ€™s gluten-free, dairy-free (without coconut milk!), and includes an oil-free option. It was also my Momโ€™s favorite *fancy* soup to serve at fall dinner parties!
  • Creamy Vegan Tomato Soup – This simple and savory blended soup is more of a thick and creamy tomato bisque. Creamy, cheesy, and cozy, this soup recipe is an easy and healthy vegetarian dinner that can be made using either fresh tomatoes or canned tomatoes and other simple ingredients.

How to Season Any Vegetable Soup

All the best vegetable soup recipes rely on a variety of herbs and spices to bring them from ordinary to extraordinary.

  • White Pepper – Slightly milder than black pepper. White pepper can be used instead for a variety of reasons from aroma to aesthetics.
  • Red Pepper Flakes or cayenne pepper – Use these alone or in conjunction with other peppers for a burst of flavor and heat.
  • Paprika and Smoked Paprika – A great spice for adding deep smoky and earthy flavor without a lot of heat. 
  • Celery salt – Seen mostly in vegan chicken vegetable soups. Celery salt is also a great addition to tomato-based soups when used in smaller quantities.
  • Oregano – Earthy and fresh, oregano is a staple in many soups, especially tomato based or Italian inspired soups.
  • Parsley – Dried parsley is usually recommended in soups for its consistency. Fresh parsley can tend to be tough and is best used as a garnish or topping.
  • Rosemary – A hearty herb that is a staple in a variety of soups. I especially love it in our Vegetable Barley Soup linked above.
  • Thyme – Also a staple herb and VERY easy to grow. I love to use fresh thyme in a variety of soups. Lemon thyme is especially good in a vegan chicken orzo soup.
  • Bay Leaf – Honestly, I donโ€™t know how or why this little leaf became so popular as a soup flavoring, but any soup feels almost naked without two or three bay leaves tossed in.

What to Serve with Vegetable Soup

Whether youโ€™re looking for a solid soup and sandwich combo or want to go a little lighter with a soup and salad, this selection offers the perfect pairings for a soup-er lunch or dinner!

Garlic Bread – I could just recommend this for the minestrone or the Tuscan mushroom soup, but honestly I love garlic bread with everything, soโ€ฆ
