Breakfast in bed is one of my favorite self-care rituals.

But what even is breakfast in bed without the good food?! I suppose it’s just bed, and then I just feel like I’m being lazy. 

No, breakfast in bed sounds much more productive. Breakfast in bed is a VERB.

These pancakes are my mom’s FAVORITE and most-requested Mothers’ Day recipe. She loves them served with fresh berries and champagne! And I mean, who wouldn’t?!

The quiche filling is made from firm tofu blended with some pantry staples, sauteed veg, and kala namak to really get that eggy taste. What breakfast in bed is complete without the BACON?! And lucky for us, there are about a million ways to make bacon that don’t involve killing an animal. Huzzah! Our favorite vegan bacon recipe is this rice paper version. It even crackles while it cooks!

If you’re more of a sliced ham person, we LOVE this seitan ham recipe. We like to make it ahead of time and fry up a few thinly-sliced pieces to eat with our tofu scramble or stacked high on a breakfast sandwich. You can even dice it up and throw it into the aforementioned quiche.

Ahhh, the classic waffle. These vegan waffles are easy to make, and the REALLY fun part is the variety of ways you can choose to top them. We love to serve them with berry compote and our vegan whipped cream, always a winning combo! Also, as easy as these are to make, people are always impressed by a homemade waffle. They just are.

If you’re looking for the easiest breakfast-in-bed option for a pastry fan, I’d go with these 2-ingredient vegan cherry turnovers. These are such a treat when served alongside a nice espresso or strong cup of coffee!

If you’re a Bloody Mary person, this spicy vegan bacon salt is the PERFECT way to rim your Bloody Mary glass. This was actually a trick my dad alerted me to, and it’s genius. 

Side note: If you wanna get really crazy and make one of those far-out Bloody Marys with a bunch of fun toppings in it (If you know what I mean, you KNOW what I mean), this salt and our bloody mary flavored vegan jerky are the perfect accompaniment. The rice paper bacon would be nice too!

10. Easy Roasted Potatoes

T has been making me potato pancakes for a loooong time, and I LOVE them. His original recipe used an egg, but it was suuuper easy to make this vegan! And they are just as delicious and crispy and perfect as they’ve always been. 


Other Vegan Breakfast in Bed Essentials

1. Espresso machine

This is something we use every single morning but it REALLY gets a workout when we make breakfast in bed. You can find them for a really affordable price (this is the one we have). There’s just something that feels so fancy and decadent about a nice espresso with steamed plant milk. 

2. Serving tray

We learned a long time ago (approximately 2.3 cats ago) that a good serving tray is a MUST when you love to do breakfast in bed. We use these bamboo trays which are awesome, but there are a TON of options out there. 

3. Waffle maker

To make the aforementioned waffles, you don’t need anything fancy. We use this waffle maker that my nana procured for us at a yard sale! (Thanks, Nana! 🙂 ) It works like a charm and doesn’t take up a ton of space when we’re not using it which is EVERYTHING.

4. French press

If you’re not ready to go full into the espresso machine, a French press is the next option. We have this one.  Plus, it’s easy to just press it and bring this upstairs so we can pour and enjoy coffee at our leisure. 

5. Juicer

T has had this juicer for FOREVER, and writing this is totally taking me back to all those mornings when T and I first lived together that I would wake up to sounds of him juicing God-only-knows-what. He’d create the most random but awesome combinations like watermelon-mint-cucumber and pineapple-lime. BONUS POINTS: It’s also a really cool way to make juice for mimosas.
