Saint Patrick’s Day is a big deal in our house. There’s music, usually a bit of dancing, and always a kickass meal we cook together whilst enjoying a drink or four. Oh, and T wears a kilt.
It may not be the all-day parties of my whiskey-soaked youth, but by some standards, I’d say we go pretty all-out!
Saint Patrick’s Day is also a big deal in Philly as well as within our own Irish-American families, so both T and I grew up with many traditional foods with which we associate the holiday. Since going vegan, we’ve had a lot of fun veganizing as many of these foods as possible!

1. Slow-Cooker Corned Beef Seitan
This delicious vegan recipe for corned beef is as meaty and flavorful as any non-vegan version we’ve ever had but made from seitan in the slow-cooker!
The gorgeous color comes from beet puree *swoon*. This is without a doubt our favorite seitan recipe! A lot of research went into this bad boy to get it juuuust the way we wanted it.
2. The PERFECT Roasted Potatoes
Make these easy roasted potatoes to serve as a side dish the corned beef seitan or for dipping in the aforementioned fondue!
They require only six simple ingredients and come out perfectly crispy + flavorful every. single. time.
3. Seitan Bangers + Mash
This is our go-to recipe for THE most meaty, mouth-watering, and memorable vegan sausages of all time!
Serve them atop a mountain of mashed potatoes and green peas, smothered in gravy. You can also use these sausages to make a vegan Dublin coddle! (that’s next on our list!)
4. Vegan Pot Pie Casserole
This vegan pot pie casserole is a quick, easy, and deliciously vegan version of T’s favorite chicken pie.
Made with tremendously simple and easily found ingredients, the hardest part is waiting for it to finish cooking! Bonus points: This one is also freezer-friendly, not to mention, kid-approved!

This hearty stew makes for the perfect cozy Saint Patrick’s Day dinner.

This Walnut and Mushroom Stout Pie with a flaky puff pastry crust is total plant-based comfort food.
Walnuts are ground up with the right spices to make a beef-style vegetarian ground meat that’s simmered in a rich stout beer savory stew with onions, carrots, garlic, and mushrooms.
Serve with mashed potatoes and mushy peas for a fantastic meatless Saint Patrick’s Day dinner.
