Beef Bouillon Ingredients & What They Do

Here’s what’s in this bouillon blend, and why each ingredient matters:

Mushroom Powder

This is one of the core umami boosters in the recipe. Mushrooms are naturally rich in glutamates (more on this in the umami section below), which create that savory, meaty “fifth taste” in foods. And mushroom powder helps to both deepen the flavor and darken the color, bringing it closer to traditional beef stock. You can find this at Asian grocery stores or online. We are particular fans of this brand of shiitake mushroom powder, but porcini mushroom powder also works. Don’t skip it! 

Sea Salt

Salt isn’t just salty. It releases and enhances flavor molecules, helping all the spices and savory flavor elements sing together. You can adjust the amount based on your personal dietary needs!

Red Miso Powder

Miso is fermented, which means naturally high levels of glutamate (that stuff we talked about being in mushrooms!) and a ton of umami complexity. Powdered miso amplifies savory depth without adding liquid. This one ingredient was the key that really unlocked that beef flavor for me, so I don’t recommend skipping it! If you truly can’t find it, you can skip it…but increase your salt by about ½–1 Tbsp so your broth doesn’t taste flat. Tamari powder is a decent 1:1 sub if you have access to that!

Nutritional Yeast

Nutritional yeast brings a nutty, savory, cheesy undertone that helps replicate the body and flavor of beef broth. It’s a cornerstone in many vegan households and not the same as brewer’s yeast or the yeast you use to make bread. This is a deactivated savory yeast. You can find the brand Red Star at many mainstream grocery stores, but we usually order it in bulk online because it goes quickly!

Paprika

Adds warmth and subtle sweetness. Smoked paprika is a great option if you want a smokier beef broth vibe! I’ve made a couple batches like this and while it’s not traditional, it’s incredibly delicious!

Oregano (or Italian seasoning)

Herbal backbones like oregano deepen the overall flavor profile without overwhelming the other elements!

Onion & Garlic Powder

Classic aromatics in spice form add foundational savoriness and balance!

Celery Salt & Mustard Powder

Celery salt gives classic “bouillon” character, and mustard powder adds some flavor complexity and a gentle note of brightness.

Cumin & Turmeric

Cumin adds earthiness; turmeric helps with color. The turmeric is optional, but I wouldn’t skip the cumin! It contributes a lot to the depth of flavor!

What Is Umami Flavor?

We talk a lot about “umami flavor” in this recipe post, so in case you’re reading it and wondering wtf umami even is, here’s a little bit of info:

Umami is considered one of the five basic tastes (alongside sweet, salty, sour, and bitter), and it’s best described as a savory, “meaty”, deeply satisfying flavor that lingers and enhances everything around it. According to Encyclopedia Britannica, umami is linked to something called glutamates which are amino acids found naturally in foods like mushrooms, tomatoes, fermented soy, and other aged foods that activate specific taste receptors on the tongue. This interaction creates a rich, full-bodied sensation in soups, broths, and beyond!

In other words for us non-scientific folk? Umami is the reason beef broth, miso soup, and slow-simmered stocks taste so comforting and layered. By layering umami-rich ingredients like mushroom powder, miso, and nutritional yeast, this bouillon blend mimics the savory depth of beef broth without any animal products!

How to Make This Bouillon Powder

This is truly as easy as spice blending gets, but there’s one tiny trick that makes all the difference: grinding the everything (especially that nutritional yeast!) into a fine powder so it dissolves cleanly!

Step 1: Add all ingredients to a small food processor or blender.

Step 2: Pulse 10-15 times until everything is finely combined and the nutritional yeast is powdery. See the photo below for what the blend will look like before and after blending!

That’s it! This yields a concentrated blend you can store and use again and again. And grinding it finer helps it dissolve seamlessly in hot water so you avoid gritty seasoning sludge at the bottom of your broth bowl. Score!

How to Use It & Make Vegan Beef Broth

The real magic of this bouillon powder is how versatile it is! Use it anywhere you’d use traditional beef bouillon powder, bouillon cubes or broth, even vegetable broth!

Here’s how to make a simple vegan and vegetarian beef stock:

  • For a full-flavored broth, use 1 Tbsp bouillon per 1 cup of hot water (my personal recommendation!)
  • For a lighter homemade broth, use 1–2 tsp per cup of water.

Stir into hot water until fully dissolved, and serve as a base for soups, stews, sauces, ramen, or grain bowls!

It’s also a fantastic quick and easy way to make au jus for our seitan French dip recipe!

And remember, you can swap this beef bouillon in any of our recipes that call for chicken broth for a deeper, more umami take.

How to Store Your Homemade Bouillon

Store your finished bouillon powder in an airtight container in your spice cabinet. Kept dry and sealed, it should stay potent for 1-2 years like other spice blends. Though fair warning, it tends to get used up fast because it’s that good in so many dishes!
