Weโ€™ve been meal prepping marinated tofu for over 12 years, and I donโ€™t say that lightly. Weโ€™ve tested it all – watery marinades, dry tofu, rubbery tofu, bland tofu – and learned the hard way what actually works. Along the way, we literally wrote the book on it with our How to Make Tofu Taste Like Chicken guide and e-cookbook, which has helped thousands of people have real tofu breakthroughs!

Flavor is non-negotiable around here. Tofu is a blank canvas, yes, but thatโ€™s also what makes it tricky. These tofu marinades are designed to solve tofuโ€™s biggest challenges: texture, depth, and that elusive โ€œmeatyโ€ bite. Every marinade in this collection is thick, bold, and intentional. The kind that makes tofu soak up flavor like a sponge instead of sliding sadly off the surface.

Overall Tofu Marinating Tips (Read This First)

Before we dive into the marinades themselves, here are my top non-negotiable tips for getting the best results. Iโ€™ll go deeper on some of these below, but if you follow just these rules, your tofu marinades will already be miles better.

  • Freeze your tofu first (yes, in the package it comes in). Freezing and defrosting tofu completely changes the texture, making it chewier and more meat-like. We break this down step-by-step in our Tofu Freezer Trick guide.
  • Marinate for at least 30 minutes to 1 hour, but overnight is best. You can even freeze tofu in the marinade for future dinners. We almost always have a freezer full of marinated tofu ready to go.
  • Slice tofu into 8 equal cutlets whenever possible. This shape gives you the best balance of crispy edges and meaty centers, but you can absolutely adjust the shape based on the recipe.
  • Use oil-based tofu marinades whenever you can. We spend so much time pressing excess water out of tofu that adding it back in with a watery marinade works against us. Oil helps carry flavor and adds that rich, savory mouthfeel.
  • Thicker marinades are better marinades. These tofu marinades cling and absorb instead of turning into a liquid mess.
  • Bake first, air fry second. Baking gives you the best texture overall, but air frying is a great option when youโ€™re short on time.

Marinated Tofu Recipes

These are our go-to easy tofu marinades. Theyโ€™re the ones we come back to again and again for weeknight dinners, meal prep, and โ€œWait, tofu can do that?!โ€ moments. Each is enough to marinate 1 (16-oz) package of extra firm tofu. Follow your cravings and click into any that speak to you!

Note: These marinades are intended for firm tofu (outside the US), extra firm tofu, or super firm tofu. We do not recommend freezing silken tofu. But we DO have a guide on silken tofu recipes if you’re looking for guidance there! 

Lemon Pepper Tofu Marinade

Bright, zesty, and endlessly versatile, this lemon pepper tofu marinade is where it all started for us.

Our go-to sweet chili tofu marinade when we want bold flavor without overthinking dinner.

Mediterranean Tofu Marinade

Herby and savory with serious depth, this Mediterranean tofu marinade never disappoints.

Marinade ingredients:

  • 1/3 cup olive oil
  • 2 cloves garlic, minced
  • 2 Tbsp vegan bouillon powder
  • 2 Tbsp red wine vinegar
  • 1 tsp fresh or dried oregano
  • 1 tsp fresh or dried thyme

Vegan Honey Garlic Tofu

Sticky, salty-sweet, and deeply comforting, vegan honey garlic tofu marinade is always a hit!

Pineapple Teriyaki Tofu

This pineapple teriyaki tofu marinade is sweet, savory, and just downright fun! It comes with a bonus pineapple reduction glaze that is sticky and delicious!

  • 2 Tbsp toasted sesame oil
  • 2 Tbsp olive oil
  • 1-2 Tbsp veggie bouillon powder
  • 1 Tbsp teriyaki sauce
  • 2 large cloves minced garlic
  • 1 Tbsp minced red onion
  • For the pineapple reduction: 1 cup pineapple juice

How to serve: Over rice with pineapple salsa and spicy teriyaki mayo.

Red Curry Tofu Marinade

A bold, warming red curry tofu marinade that delivers big flavor with minimal effort.

Why Freeze Tofu Before Marinating?

When extra-firm tofu freezes in its original water, ice crystals form inside and around it, creating tiny tears throughout the block. When you defrost and press it, those pores stay open, turning tofu into the perfect sponge for marinade. The result? A chewy, meaty texture that actually holds onto flavor.

How to Make This an Easy Part of Your Routine

Keep one or two blocks of tofu in your freezer at all times. When you take one out to defrost, add another to your grocery list and freeze it as soon as you get home. This way, it becomes second nature!

Do You Have to Freeze Tofu Before Marinating?

No, but it makes a huge difference when you do. You can also freeze tofu in the marinade, which still improves texture (just not as dramatically). At the very least, always press tofu before marinating. Either use a tofu press to do this or check out our homemade method in this video.

The Best Tools for Marinating Tofu

None of these are required; you can totally start with what you have! But they make life easier if this becomes a normal part of your ritual.

  • Stasher Reusable Silicone Bags – My absolute favorite for marinated tofu meal prep! I upgraded from using an airtight container to these bags last year and am so happy I did!
  • Chalk Markers – Optional, but a great way to label marinades on the matte side of those Stasher bags
  • Vegan Bouillon Powder – Our homemade version takes 5 minutes and adds huge flavor. I canโ€™t recommend it enough over any other store-bought option out there. It has more 5-star reviews than any other recipe on our site for a reason!

How to Slice Tofu for Marinating

Cutlets – We usually recommend slicing the tofu block into 8 equal cutlets for maximum meaty texture. I do this by laying the block of tofu on its largest (surface area wise) side, then slicing the block in half. Then, I slice those two tofu slabs in half. Then, I slice each of those four blocks in half. This creates a nice cutlet style cut that is still crisp on the outside and meaty on the inside!

Wing / Tender-Style – For wing or tender-style tofu pieces, I will often rip the tofu into chunks. These can be of various sizes; just make sure the general thickness of all of the pieces is the same. That’s what matters!

Cubes / โ€œSticksโ€ – You can also dice the tofu into tofu cubes or cut them into long sticks, kind of like “chicken fries”. These two styles will have a shorter cooking time than the previous two, so keep that in mind!

How Long to Marinate Tofu

  • Minimum: 30 minutes โ€“ 1 hour
  • Best: Overnight
  • Also great and totally fine: 3โ€“5 days in the fridge or frozen in the marinade

How to Cook Marinated Tofu

Most of our recipes call for baking low and slow to remove excess moisture before crisping. If you cook the tofu for too short a time on too high a heat, you can risk sealing the excess moisture (read: squishiness) in the tofu rather than create that meaty texture we’re looking for.

  1. I look forward to trying your recipes, and the tofu marinades look good. Just last night, I followed a recipe I already had for baking tofu at 400, and they came out crispy on the outside and very tough on the inside. They were awful. I see your oven temp is much lower with longer baking time. A few months ago, I tried this same tofu recipe with my air fryer and tofu was tough. So, thank you so much and I sure like your website!
