These are our four favorite breakfast casseroles we love to enjoy again and again!

Breakfast Potato Casserole – My mom lent me her baking dish to film this recipe in, so I sent her home with some casserole to try and she flipped for it! Said it reminded her of her au gratin potatoes but breakfast-ified.

Vegan Overnight Strata – Whether itโ€™s Christmas morning or a lazy Sunday on the couch, you can actually enjoy brunch with your guests by making this overnight strata the night before and just popping it in the oven. This Campbellโ€™s copycat casserole is like diving into a bready, bacony hug

Ultimate Vegan Breakfast Casserole – We fed this vegan sausage, pepper, and JUST Egg casserole to our veggie-hating friend who stayed with us, and she loved it. And she runs a grilling blog! No one can resist this perfect breakfast casserole – maybe itโ€™s the tater tot crust?

Vegan Hash Brown Casserole – This Cracker Barrel copycat earned a 5-star review from a reader named Marisa: โ€œThis was my first time using dairy free cheese and I was pleasantly surprised. We all loved this dish. Just as good as the dairy based recipe that I have used for years!โ€

Vegan Pineapple Stuffing: We weren’t sure whether or not to include this one, but it is baked in a casserole dish, includes fruit, and traditionally served at either brunch or dinner, so why not?! Whether you call it pineapple souffle or pineapple stuffing, this recipe is a serious superstar. It’s a veganized version of the recipe my Mom made every Easter, and it lives up to the original!

What to Serve with Breakfast Casserole

The beautiful thing about these vegetarian breakfast casseroles is that theyโ€™re a complete meal in a single dish. But if youโ€™re still looking for a little something extra to go with your casserole, we have lots of suggestions!

These are just a few of my personal favorites:

How to Store Breakfast Casseroles

Always allow hot food to cool completely before wrapping or covering for storage. Allowing the food to cool to room temp prohibits condensation and bacteria from forming during storage.

Depending on how much casserole is left in the baking dish you can

  • Just cover the entire casserole dish with plastic wrap or aluminum foil and store in the fridge
  • Place smaller amounts of leftovers in an appropriate-sized airtight container and refrigerate
  • Cut individual slices of the casserole and store as portions for easy leftovers or meal prep

You can also freeze slices of leftover casserole in freezer safe storage bags. Thaw completely in the refrigerator or defrost in the microwave before reheating and eating.

How to Reheat Prepared Casseroles

You can reheat your casserole in the oven or the microwave. If Iโ€™m just reheating 1-2 pieces, Iโ€™ll microwave them. If Iโ€™m reheating more than that, Iโ€™ll usually heat them in the oven.

In the Microwave – Place the portion on a microwave safe dish and heat on medium-high heat (75-80%) for 2-3 minutes until hot.

In the Oven – Heat oven to 350ยฐF. Place the casserole pieces in a baking dish or pie plate and cover with foil to keep from drying out. Heat for 10-15 minutes until warmed to your liking.
