What Is TVP Made Of?

TVP (textured vegetable protein), sometimes called TSP (textured soy protein), is made from defatted soy flour that’s been cooked and dehydrated. Once rehydrated, it has a hearty, chewy texture that makes it a perfect substitute for ground beef or other minced meats in vegan cooking.

Important note: This post focuses on TVP granules, also called “crumbles.” TVP also comes in larger chunks or strips. Sometimes these are called “soya chunks” or “soy meat”. How to Make TVP Taste Good

Flavor, flavor, flavor! TVP is a blank slate (like tofu or soy curls) which means how you season and cook it makes all the difference.

Here’s how to make it truly meaty and delicious:

  • Skip the water. Never rehydrate TVP in plain hot water or low-flavor vegetable broth. Use flavorful broth or seasoned liquids instead to build flavor from the inside out.
  • Add fats. TVP is naturally fat-free, so a little fat goes a long way toward recreating that rich, meaty texture. We love using extra virgin olive oil or refined coconut oil (not virgin, so you avoid coconut flavor).
  • Build flavor while cooking. Many of our recipes skip the separate rehydration step and instead let the TVP absorb flavor directly from the sauce or broth it’s cooked in. This yields better texture and flavor.
  • Don’t write it off too soon! If you’ve tried TVP before and didn’t like it, our method might just change your mind. The right technique makes all the difference!

How much protein is in TVP?

TVP is high protein, typically around 12–15 grams per ¼ cup (dry TVP). Once rehydrated, that’s comparable to many meat-based proteins, making it an excellent plant-based alternative.

What is a substitute for TVP?

If you can’t find TVP granules, you can blitz up some soy curls or TVP chunks / strips in a food processor until they’re a crumbly texture. I also find these recipes a great way to use up those small granules at the bottom of every bag of soy curls.

What is the difference between textured vegetable protein (TVP) and textured soy protein (TSP)?

They’re actually the same thing! The terms are used interchangeably, and both are made from defatted soy flour.

What is the best TVP brand?

We’ve had great success with Bob’s Red Mill TVP as well as Anthony’s Goods. NOW Foods also makes a popular brand of TVP that has good reviews! Look for brands with minimal ingredients (ideally just “defatted soy flour”).
