Week 10: Vegan Saint Patrick’s Day Dinners

This week, weโ€™re leaning fully into one of our favorite food holidays of the year: St. Patrickโ€™s Day!

We absolutely love celebrating SPD in our house, and over the years weโ€™ve built up quite the collection of festive recipes! Everything from hearty Irish-inspired dinners to fun green treats and classic Philadelphia sweets. If you want to go all out this year, you can browse our full collection here.

And if youโ€™re feeling extra festive, there are two recipes we especially canโ€™t recommend enough:

Our Slow Cooker Vegan Corned Beef is the ultimate St. Patrickโ€™s Day dinner. It does take a little planning ahead and works best when made over a couple of days, but the flavor and texture are absolutely worth it!

And if youโ€™ve never had them before, Vegan Irish Potatoes are a must-try. Theyโ€™re actually a Philadelphia tradition – little coconut cream candies rolled in cinnamon to look like tiny potatoes. Sweet, nostalgic, and so fun to make.

But if youโ€™re just looking for cozy, weeknight-friendly dinners with a St. Patrickโ€™s Day feel, weโ€™ve got you covered too!

Hereโ€™s Whatโ€™s for Dinner This Week:

Monday:

Vegan Pot Pie Casserole

Creamy, hearty, and packed with cozy comfort. Itโ€™s filling enough on its own, but you can serve it with a simple side salad for a little crunch. Maybe with avocado dressing to keep the green theme going!

Prep-ahead option:

  • Feel free to make the filling a day ahead of time. Then Monday dinner is all assembly!

Tuesday:

TVP Shepherdโ€™s Pie

A classic St. Patrickโ€™s Day-style comfort meal. Rich filling, fluffy potatoes, and exactly the kind of dinner that makes the evening feel extra cozy. Great on its own or with a simple side salad!

Prep-ahead option:

  • You can make the mashed potatoes and/or the filling 2-4 days ahead of time so Tuesday is just assemble and bake!

Wednesday:

Seitan Bangers

Serve with creamy Vegan Mashed Potatoes and peas smothered in Cashew Gravy for a cozy pub-style dinner made completely vegan!

Prep-ahead option:

  • You can make all the components of this dinner 3โ€“4 days ahead of time if you’d like!

Thursday:

Walnut & Mushroom Stout Pie

Rich, savory, and deeply satisfying. Serve alongside mashed potatoes or Easy Roasted Potatoes for a hearty comfort food dinner.

Prep-ahead option:

  • Like many savory pies, the filling can be made ahead of time so you just have to assemble and bake.

Friday:

Vegan Irish Cheddar + Whiskey Fondue

Because honestlyโ€ฆwhy not have a Friday night fondue dinner?! Serve with roasted potatoes, bread cubes, and veggies for dipping. Green apples are fantastic here too. And if you made that Slow Cooker Vegan Corned Beef, we absolutely love cubing it and dipping it in the fondue!
