Creamy Vegan Rice Bake

You'll need: broccoli, soy curls, instant brown rice, vegan cheese seasoning, salt, pepper, onion powder, and vegan cream of chicken 

We use our homemade vegan condensed cream of chicken for this recipe, and it works beautifully!

Step 1: Rehydrate your soy curls. While rehydrating, stir together the rice, broccoli, soup, seasonings, and water in an 11x8 casserole dish. 

Step 2: When rehydrated, top the rice bake with the soy curls and gently push down on them with the back of a spoon.

Step 3: Cover and bake the rice bake at 375F for 50 minutes. It will look like this!

Step 4: Let the rice bake sit (covered) for 10 minutes before removing the cover, sprinkling with extra vegan cheese seasoning or dairy-free parmesan, and enjoy!
