Vegan Maple Bacon Doughnuts

Ingredients
  

  • 1 1/4 cup all-purpose flour
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/4 cup maple syrup
  • 1/4 cup vegan butter melted
  • 2 Tbsp cashew or almond milk

For the Frosting:

  • 1/2 cup organic powdered sugar
  • 3 Tbsp maple syrup
  • optional topping: coconut bacon

Instructions
 

  • Add the flour, coconut sugar, baking powder, baking soda, and salt to a bowl. Use a large wooden spoon to combine.
  • Create a well in the center of the dry ingredient mixture. Pour in melted butter, maple syrup, and cashew or almond milk. Mix until fully combined.
  • Preheat oven to 325F and grease a doughnut mold.
  • Fill doughnut molds with the dough, leaving about 1/4 to 1/2 an inch of space at the top for the dough to puff up a bit.
  • Bake at 325F for 9 minutes.
  • To make your frosting, add powdered sugar and maple syrup to a small bowl and whisk until fully combined and creamy. You may want to keep this in the fridge until the doughnuts are ready.
  • Allow the doughnuts to cool and slather them with the maple frosting. If using coconut bacon (HIGHLY recommended), sprinkle them on top of the maple frosting.
