Plant Based Granola

This vegan granola recipe has been our go-to for six years, and after countless batches (and lots of begging from me!), T finally wrote it down so we could share it with you. It’s perfectly sweet, a little salty, irresistibly crunchy, and proof that making your own granola is way easier than you think! And the best part? It uses just 8 ingredients and takes about 30 minutes from start to finish, making it one of the easiest ways to upgrade your breakfast routine!

Equipment

Ingredients
  

  • 2 cups oats
  • 1/2 cup raw cashew pieces optional
  • 3 Tbsp light brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 Tbsp coconut oil melted
  • 2 Tbsp maple syrup or agave
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 280F.
  • In a large bowl combine the oats, cashews (if using), brown sugar, cinnamon, and salt.
  • In a small bowl, whisk together the melted coconut oil, maple syrup, and vanilla.
  • Then, pour the wet mix into the dry oat mix and stir to combine thoroughly.
  • Spread the granola mix out on a baking pan evenly.
  • Bake at 280°F for 25-30 minutes, stopping to remove and stir the granola every 10 minutes.
  • Let cool and enjoy with dairy-free yogurt, a splash of oat milk, or straight off the pan. Enjoy!

Notes

Chocolate Granola: If you want to make chocolate granola, throw a handful of chocolate chips on top of the granola after it’s finished baking and let the heat from the granola and baking pan melt them enough to stir them in! This also works with peanut butter chips and vegan white chocolate chips.
