Who knew the secret to fast and flavorful vegetable soup was a bottle of V8?! This V8 Vegetable Soup is the quickest and easiest homemade soup you will ever make! Just 2 ingredients + a couple seasonings and 10 minutes to make perfectly comforting homemade veggie soup with a rich tomato broth. You don’t even need to chop anything! This trick takes the effort out of making soup, without taking out any of the flavor.

  • Drain and strain the canned vegetables
  • Pour the V8 and strained vegetables into a large soup pot
  • Add the seasonings and stir.
  • Cover with a lid and bring to a boil, stirring occasionally
  • Once it reaches a boil, reduce heat to low, remove the lid, and simmer for 5-7 minutes or 7-10 minutes if using frozen veg.
  • Serve hot with vegan garlic bread or easy 30-minute bread slathered with plant-based butter!

Notes on Canned Vegetables: We used a canned blend that includes corn, peas, carrots, and potatoes. You can also sub 3 1/2 cups frozen vegetables.
