Make-Ahead Vegan Breakfast Bake

You'll need: baguette, vegan bacon, vegan cream of bacon substitute, JUST Egg, unsweetened plain plant milk, vegan mozzarella, tofu scramble seasoning, grape tomatoes

We use our homemade vegan cream of bacon for this recipe. It's so easy to make!

Step 1: Beat the vegan cream of bacon, JUST egg, plant milk, 3/4 cup vegan cheese, and tofu scramble seasoning in a large bowl with a whisk.

Step 2: Add the cubed bread and half the vegan bacon. Stir until combined. Then, let it sit 10 minutes and stir again.

Step 3: Grease a square 9x9 baking dish. Pour the bread and sauce mixture into the greased dish and press down with a rubber spatula to flatten.

Step 4: Top your vegan breakfast bake with remaining vegan bacon, cheese, and tomatoes. Cover the dish tightly and refrigerate at least 4 hours or overnight.

When ready to cook, heat the oven to 400F.  Bake the vegan breakfast bake, uncovered, for 40 minutes or until a knife inserted in the center comes out clean.
