Step 1: Roll out 1 sheet of puff pastry and place it in the bottom of a rectangular baking dish. Poke with a fork about 40 times and bake at 400F for 15 minutes...
...until it is browned and crispy like this! This will be our bottom crust.
Step 2: Start the filling by boiling the peeled and diced potatoes in the water for 5 minutes.
Step 3: Add the rest of the ingredients to the potatoes, stir, bring back to a boil, and cook (covered) for 10 minutes
Step 4: Carefully pour this filling on top of the cooked bottom crust and float the second puff pastry sheet on top. Cut 3 slits for steam to escape.
Step 5: Bake for 20 minutes at 400F and then let cool 10 minutes before serving!
