Plant-Based Chicken Pie

You'll need: frozen mixed veggies, potatoes, soy curls, puff pastry, water, salt, pepper, onion powder, and vegan cream of chicken.

We use our homemade vegan condensed cream of chicken for this recipe, and it works perfectly!

Step 1: Roll out 1 sheet of puff pastry and place it in the bottom of a rectangular baking dish. Poke with a fork about 40 times and bake at 400F for 15 minutes...

...until it is browned and crispy like this! This will be our bottom crust.

Step 2: Start the filling by boiling the peeled and diced potatoes in the water for 5 minutes.

Step 3: Add the rest of the ingredients to the potatoes, stir, bring back to a boil, and cook (covered) for 10 minutes

Step 4: Carefully pour this filling on top of the cooked bottom crust and float the second puff pastry sheet on top. Cut 3 slits for steam to escape.

Step 5: Bake for 20 minutes at 400F and then let cool 10 minutes before serving!
