Easy Italian Vegetable Soup

You'll need: Olive oil, garlic, carrots, celery, onion, oregano, basil, thyme, parsley, black pepper, crushed tomatoes, potatoes, green beans, bouillon, water, small pasta, kidney beans, and escarole

We used our homemade bouillon powder in this Italian Vegetable Soup recipe to add an incredible savory broth that's not overly salty!

Step 1: Saute the garlic, carrots, celery, and onion in olive oil for 3-5 min. Add all the seasonings except the bouillon and continue to saute for another 2-3 min.

Step 2: Add the tomatoes, potatoes, green beans, bouillon and water and give it all a good stir. Bring to a boil then reduce heat to a simmer for 15 minutes partially covered.

Step 3: Add the pasta, kidney beans, escarole/spinach and continue to simmer, uncovered, for another 15-18 minutes until the pasta and green beans are tender.

Taste and adjust seasonings before serving this Italian Vegetable Soup and enjoy!
