No-Boil Veggie Noodle Casserole

You'll need: celery, carrots, onion, soy curls, noodles, plain non-dairy milk, vegan cream of chicken, salt, pepper, Ritz crackers, and vegan butter

We use our homemade vegan condensed cream of chicken for this recipe. It's so easy and delicious!

Step 1: Stir together the water, celery, onion, carrots, soup, seasonings, and non-dairy milk in a 3-quart casserole dish. 

Step 2: Submerge the noodles into this mixture and press down on them with the back of a large wooden spoon to make sure they are as submerged as possible.

Step 3: Cover the dish tightly with foil or an oven-safe lid and bake the veggie casserole at 400F for 40 minutes.

Step 4: While the casserole bakes, stir together the melted vegan butter and Ritz cracker crumbs. This will be our topping!

Step 5: After 40 minutes, remove the pasta bake from the oven, stir, and top with Ritz cracker mix. Bake another 5-10 minutes until topping is lightly browned.

Let the noodle casserole sit 10 minutes uncovered before serving and enjoying with family and friends!
