Squash and Zucchini Soup

You'll need:
olive oil, carrots, celery, onion, garlic, bouillon, rosemary, oregano, fennel, thyme, coriander, white pepper, bay leaves, potatoes, barley, zucchini, squash, peppers, scallions

Step 1:
First, saute the garlic, carrots, celery, and onion in olive oil for about five minutes until fragrant.

Next, add all the herbs, spices, bouillon, and bay leaves to the large pot. Stir to coat thoroughly.

Then, add the barley, potatoes, and hot water, bring to a boil, and cook uncovered for 20 minutes.

Step 4:
Finally, add the zucchini, yellow squash, and red peppers. Reduce the squash and zucchini soup to a simmer and cook 25-30 minutes uncovered.
