White Bean Salad Sandwiches

You'll need: white beans, celery, onions, lemon juice and zest, vegan mayo, salt, pepper, mustard, kelp granules, garlic powder

Step 1: Mix the seasonings with the vegan mayo.

By doing this step first, you'll ensure an evenly delicious flavor in your white bean salad.

Step 2: Rinse and drain the white beans. Add them to a large bowl and par-mash them with a potato masher or big spoon.

Step 3: Add the seasoned mayo along with the rest of the ingredients and stir to combine.

Serve this white bean salad between two slices of lightly toasted bread for the best white bean salad sandwich! Leftovers will keep in the fridge for a week.
