Veggie Pinwheels Recipe

You'll need:  Flour tortillas Hummus Grated carrots Chives or scallions Sea salt Ground black pepper Ground coriander

Step 1:  Add all the filling ingredients (hummus, carrots, chives, coriander, salt and pepper) to a large mixing bowl. Stir to combine fully.

Step 2:  Lay the tortillas flat and spread a thick layer of hummus and veggie filling on each.

Step 3:  Roll each tortilla up from one end to the other. Be sure to keep them compact without squeezing too hard.

Step 5:  Use a large sharp serrated knife to slice the rolled up tortillas into 1/2 inch bite-sized pieces.

Serve these veggie pinwheels immediately. They're the perfect healthy snack for after school or work!
