Vegetarian Teriyaki Chicken

You'll need: extra firm tofu (frozen and thawed), olive oil, sesame oil, red onion, garlic, pineapple juice, and vegan chicken broth powder

First, mix all the ingredients for your teriyaki marinade in a large measuring cup with a fork or small whisk.

Marinate the vegan chicken (thawed tofu) in the teriyaki marinade for at least 1 hour or overnight for the best flavor!

I like to layer the tofu slices in the marinade in a square baking dish like this, covered tightly. Just make sure everything is coated.

After marinating, bake the vegetarian teriyaki chicken at 350F for 40 minutes, stopping once halfway through to flip.

While the tofu is baking, cook the pineapple juice down to a syrupy texture. Toss the baked vegetarian chicken in the pineapple juice before serving.

Serve the vegetarian teriyaki chicken immediately over rice, on a sandwich or salad. I also eat them on their own - so good!
