Vegetable Soup

You'll need: can of white beans, tomato paste, canned or fresh diced tomatoes, green beans, potatoes, carrots, onion, corn, peas, salt, pepper, Italian seasoning

Step 1: Use an immersion blender to blend the water, white beans, tomato paste, and 1/3 cup diced tomatoes in a large pot until smooth. Bring this to a boil.

Step 2: Then, add the green beans, diced potatoes, and diced carrots and cook, uncovered, for 10 minutes.

Step 3: Add the rest of the vegetable soup ingredients, cover, and bring it back to a boil. Once at a boil, remove the cover and cook for 5 more minutes.

Step 4: Finally, turn the heat to medium and simmer the vegetable soup uncovered for 25-30 minutes until the veggies are cooked through.

Serve this simple vegetable soup with fresh bread or a sandwich for a healthy light lunch or dinner option. Enjoy!
