Vegan Pork Tacos

You'll need: jackfruit, limes, orange juice, tamari, taco seasoning, agave, hot sauce, oil, red onion,  garlic, tortillas, and your favorite vegan pork taco toppings

Step 1: Marinate the jackfruit in the vegan pork taco marinade for 3 hours or overnight in the fridge.

Step 2: Saute the onion and garlic in the oil  with a pinch of salt for 3-5 minutes.

Step 3: Add the jackfruit and vegan pork taco marinade to the sauteed onion and garlic. Simmer for 10 minutes.

Step 4: Transfer the jackfruit pieces to a large mixing bowl and shred it to get a shredded pork texture.

Step 5: Add the vegan pork back to the pot and cook another 10 minutes covered and 5-10 more minutes uncovered until the vegan pork is lightly charred in places.

Serve this jackfruit as vegan pork tacos on soft corn or flour tortillas with avocado crema and sliced onions!

PS - We love to freeze the meat for vegan pork tacos in our 1-cup Souper Cubes so we can defrost just a couple portions at a time and make taco night easy!
