Vegan Mac and Cheese Casserole

You'll need: elbows, plant milk, vegan butter, breadcrumbs, miso paste, yellow mustard, refi, ned coconut oil, ACV, tomato paste, firm tofu, vegan cheese, spices

Step 1: Add all the vegan cheese sauce ingredients to a blender. We used a Vitamix, but a good-quality food processor will also work.

Blend until smooth, creamy, and shiny. This can take up to 6-7 minutes and several breaks to scrape down the sides of your blender. Use a tamper if you have one!

Step 2: Stir together the cooked elbow pasta and tofu cheese sauce for the mac and cheese casserole.

Step 3: Assemble the vegan mac and cheese casserole in the casserole dish starting with a layer of the sauced up elbow pasta.

Top the elbows with a layer of vegan shredded cheese. Repeat these layers one more time.

Top the vegan cheese with the bread crumb and vegan butter mixture. This part is optional if you want that classic crunchy topping.

Bake this vegan mac and cheese casserole at 325F for 15 minutes. Then, broil the casserole for another 3-4 minutes for an even crunchier topping!
