Vegan Lemon Pepper Chicken

You'll need: extra firm tofu (frozen and thawed), olive oil, lemon juice and zest, black pepper, and vegan chicken broth powder

First, mix all the ingredients for your marinade in a large measuring cup with a fork or small whisk.

Marinate the vegan chicken (thawed tofu) in the lemon pepper marinade for at least 1 hour or overnight for the best flavor!

After marinating, bake the vegan lemon pepper chicken at 350F for 40 minutes, stopping once halfway through to flip.

Depending on the thickness of the cutlets, how long you froze the tofu, and what brand you're using...you may want to cook the vegan chicken 10-20 minutes longer.

Vegan Lemon Pepper Chicken is fantastic served on a vegan caesar salad or with a simple rice and plant-based gravy!
