Easy Vegan Latkes

Step 1: In a small bowl, whisk together the flour, flaxseed, onion powder, garlic powder, salt, and pepper. Then, set this aside.

Step 2: Next, you'll prep the potatoes for your vegan latkes. Fill a large bowl half full with cold water. Grate the peeled potatoes into this bowl.

Step 3: Strain the potatoes and rinse off the extra starch. Use your hand to apply pressure to press out the remaining water. This part is vital!

Step 4: After rinsing your bowl and patting it dry, place the grated potatoes back in the bowl along with the optional minced onions and flour mix.

Step 5: Incorporate well with your hands or a wooden spoon. Keep this bowl covered with a large plate or pot lid when you’re not using it.

Step 6: Form a ball with 1/4 cup of the potato mixture. Add 3 of these to your hot oiled pan and press down on them lightly with your spatula to flatten them slightly.

Step 7: After 4 - 5 minutes, gently pull your vegan latkes with your spatula from the pan. Start by at the outer edges. Flip and cook for another 3 - 5 minutes.

Place each vegan latke on a paper-towel covered plate to drain. I like to sprinkle just a little more onion powder and salt before serving.
