Easy Vegan Hummus Wrap

You'll need: cucumber, tortillas, mixed greens, romaine, hummus, carrot, sun-dried tomatoes, roasted red peppers,  olives, red onion, chickpeas, pickles, parsley, balsamic vinegar

Step 1: Add all the filling ingredients (greens, veggies, chickpeas, olives) to a large mixing bowl and toss to fully combine.

Step 2: In a small separate bowl, whisk together the hummus, sun-dried tomato liquid, parsley, and balsamic to make the dressing.

Step 3: Toss the creamy hummus dressing with the veggie filling ingredients to fully combine the two.

Step 4: Lay a sun-dried tomato tortilla flat and spread a thick layer of spicy hummus over the bottom 2/3rds of the circle.

Step 5: Top that layer of hummus with 1/4 of the filling. Then, top that with an optional sprinkle of vegan feta cheese!

Step 6: Wrap up the tortilla by first pulling the sides in over the filling. Then pull the bottom up and over the filling. 

Step 7: Then just wrap the hummus wrap all the way up keeping it compact in your hands. Filling might fall out a little and that's okay!
