Vegan Tofu Schnitzel Recipe

You'll need: extra firm tofu (frozen and thawed), olive oil, vinegar, bread crumbs, spices, garlic, and vegan chicken broth powder

First, mix all the ingredients for your marinade in a large measuring cup with a fork or small whisk.

Pour a little tofu schnitzel marinade in the bottom of a container. You just need a thin layer.

Layer the tofu in the marinade, pouring a layer of marinade in between any tofu layers. Marinate for 1 hour or overnight!

After marinating, fill a large square baking dish with the bread crumbs and spices. Feel free to mix up the flavors here!

Place each marinated tofu square in the bread crumbs and brush the exposed side with extra schnitzel marinade.

Then, flip each tofu schnitzel and press down to adhere the bread crumbs to the other side.

After marinating, bake the tofu schnitzel at 350F for 50 minutes, stopping once halfway through to flip.

Depending on the thickness of the cutlets, how long you froze the tofu, and what brand you're using...you may want to cook the tofu schnitzel 10 minutes longer.

Serve tofu schnitzel on salads, as a vegetarian main dish, or over pasta, potatoes, or rice!
