Vegan Tofu Parmesan Recipe

You'll need: extra firm tofu (frozen and thawed), olive oil, tapioca starch, bread crumbs, spices, garlic, and vegan chicken broth powder, vegan mozzarella

First, mix all the ingredients for your tofu parmesan marinade and marinate the tofu slices for at least  1 hour or overnight.

After marinating, bread each tofu parmesan slice by first coating it in tapioca starch.

Then, add this starch-coated tofu slice back to the marinade and coat it well with the parmesan marinade.

Finally, coat the tofu slice in the bread crumb mixture. I like to do this in a pie plate or baking dish with high walls.

Then, bake the tofu parmesan cutlets at 350F for about 40 minutes until crispy on the outside and meaty on the inside.

Finish by melting some vegan mozzarella on top. I like to use slices normally, but shredded mozzarella will also work!

Serve tofu parmesan on pasta with marinara sauce, as a vegetarian sandwich, or all on their own!
