Sun-Dried Tomato Spread

You'll need: sun-dried tomatoes, cherry tomatoes, balsamic vinegar, vegan butter, garlic powder, salt, and pepper

First, melt the vegan butter in a medium saucepan. You can also use olive oil or skip this part for oil-free!
Then, add the rest of the ingredients for the sun0dried tomato spread and stir with a big wooden spoon.
Bring the tomato mixture to a low simmer on the stove and use a potato masher to mash the big tomato pieces.
Cook on a low heat, uncovered, until the tomato mixture reaches a spread-like consistency. It will look like this!
Spread this flavor powerhouse on grilled bread for breakfast, a sandwich for lunch, or just lick it off the spoon!
