Simple Cold Vegetarian Sandwiches

You'll need: Everything bagels, stone ground mustard, arugula, salad greens, tomato slices, roasted red peppers, pickles, red onions, and cucumbers.

We love making our own vegan bagels for these sandwiches. You can even freeze them for later!

Step 1: Slice the bagel in half and top each side with a thin layer of stone ground mustard.

Dijon mustard or spicy mustard will also work for these veggie sandwiches!

Step 2: Top one bagel half with the greens. Then, top thhe greens with roasted red peppers. This helps keep the greens in place!

Step 3: Top the roasted red peppers with (in order) the cucumbers, tomato slice, and pickles.

Bring the two bagel halves together and slice in half before serving and enjoying for a picnic or anytime you want a quick simple vegetarian lunch.
