Quick + Easy Walnut Chorizo

You'll need: walnuts, olive oil, lime juice, soy sauce, diced onion, minced garlic, dried guajillo peppers, dried oregano, cumin, coriander, and sun-dried tomatoes.

Step 1: Soak the walnuts in cool water for 20 minutes.
Then, drain them and add them to a small food processor along with all the other ingredients.
Step 2 Pulse the walnuts, stopping to scrape down the sides as needed.
...until all the ingredients are combined and the walnuts are a crumbly ground meat texture.
Serve this walnut chorizo on salads, pizzas, tofu scrambles, breakfast tacos, burrito bowls, and nachos!
No need to heat, but you can if you want!
