Pineapple Pico de Gallo

You'll need: pineapple, red onion, scallions, red pepper, jalapeno, and toasted sesame oil

Step 1:  Mince the red onions and jalapenos.  Small dice the pineapple and red pepper.  And slice the scallions.

Step 2: Add all the ingredients to a bowl and drizzle on the toasted sesame seed oil. This is optional but adds fantastic flavor!

Step 3: Then, you just fold the ingredients together with a silicone spatula until totally combined.

Let the pineapple pico de gallo rest, covered, in the fridge for at least an hour. Serve with chips and enjoy!
