Spicy Peppers and Green Beans

You'll need: green beans, red peppers, long hot pepper, olive oil, water, salt, pepper, and garlic powder

Heat 1 Tbsp olive oil in a non-stick pan. Add the peppers and green beans  and use a spatula to coat them in the oil.

Then, add 2 Tbsp of water and cover the pan. Let the vegetables cook in the skillet for 5-6 minutes without removing the lid.

Next, drizzle with 1 Tbsp olive oil and stir to coat. Cook, covered, for another 3-4 min, stirring every minute or so.

Finally, sprinkle with spices and carefully add 2 Tbsp water to the skillet to deglaze the pan. Stir and cook for another 2-4 min until  charred and tender.

My favorite way to eat these peppers and green beans is with our baked vegan mac n cheese!
