Vegetarian Low Carb Ramen

You'll need: curry paste, soy curls, bouillon, curry powder, ramen noodles (optional), zucchini, carrot, coconut milk, lime

Step 1: Add the curry paste, soy curls, bouillon, curry powder, and ramen noodles to a wide mouth 32-oz mason jar.

Step 3: To cook: Pour boiling water into the jar, enough to just cover everything. Seal the jar and let it sit for at least 5 minutes.

Step 4: Finally, to finish our low carb ramen, open the jar and add the coconut milk and lime juice. Stir thoroughly to combine.

To serve: Pour your low carb ramen into a large soup bowl and top with an extra lime wedge and scallions. Enjoy!
