Jackfruit "Tuna" Casserole

You'll need: noodles, unsweetened non-dairy milk, vegan condensed cream of mushroom, salt, pepper, ground nori, peas, pimientos, miso paste, jackfruit, vegan butter, and bread crumbs

We use our homemade vegan condensed cream of mushroom for this recipe. It's so easy to make!

Step 1: Stir together the all the ingredients (except the noodles, butter, and breadcrumbs) in a 3-quart casserole dish until totally combined.

Step 2: Submerge the noodles into this mixture and press down on them with the back of a rubber spatula to make sure they are as submerged as possible.

Step 3: Cover the dish tightly with foil or an oven-safe lid and bake the jackfruit casserole at 400F for 40 minutes.

Step 4: While the casserole bakes, stir together the melted vegan butter and bread crumbs. This will be our topping!

Step 5: After 40 minutes, remove the jackfruit noodles from the oven, remove the cover, and stir it completely.

Step 6: Top with the bread crumb mix. Bake another 5-10 minutes, uncovered, until topping is lightly browned.

Let the vegan tuna noodle casserole sit 10 minutes uncovered before serving and enjoying!
