Healthy Tomato Basil Soup

You'll need: olive oil, carrots, onion, garlic, salt, basil, pepper, bouillon, diced tomatoes (canned or fresh tomatoes), tomato paste, non-dairy cream or milk, white miso paste

Step 1: Saute the carrots, onion, and garlic in olive oil. Add the salt, basil, and pepper and saute for 5-7 minutes.

Step 2: Add the water, bouillon, diced tomatoes, and tomato paste. Bring this to a boil. Then, turn the heat to low and cook, covered, for 10 minutes.

Step 3: Use an immersion blender to puree the soup until it's mostly creamy. You can leave a few chunks of veggies if you like that texture!

Step 4: Finally, stir in the non-dairy cream or milk and miso paste. Cover and let sit off the heat for 5-10 minutes.

Serve this healthy tomato soup hot topped with non-dairy feta or alongside a big baked potato. Enjoy!
