Quick and Easy Spinach Pesto

You'll need: spinach, basil (optional), cashews, olive oil, nutritional yeast, salt, white miso paste, and garlic

First, add the cashews to your food processor. If you don't have cashews, use pine nuts or hemp seeds!

Pulse the cashews in your food processor until they are ground down to a fine dust like this.

Then, add all the rest of the spinach pesto ingredients to your food processor with the ground cashews.

And process until all ingredients are combined, evenly minced. The spinach pesto consistency should look like this.

Spread this flavorful spinach pesto on toast, a sandwich, crackers, or veggies. It also makes a fantastic pasta sauce and salad dressing!
