Dairy-Free Ricotta Hotcakes

You'll need: tofu ricotta, plant milk, lemons, vegan butter, sugar, ground flaxseed, vanilla, baking powder and soda, flour

We use our homemade tofu ricotta cheese for this Vegan Ricotta Hotcakes recipe. It's so easy to make!

Step 1: First, whisk together the flour, sugar, baking soda, and baking powder in a large mixing bowl until fully combined.

Step 2: Next, whisk together the tofu ricotta, plant milk, flax "eggs", and vanilla extract in a small mixing bowl until totally combined.

Step 3: Then, add the wet mixture to the dry mixture and stir fully to combine. Now, add the vegan butter, lemon juice, and lemon zest.

Step 4: Finally stir everything together until the batter looks like this in texture. Be careful not to over-stir the ricotta hotcake batter.

Cook the vegan ricotta hotcakes for 2-3 minutes on each side and serve them topped with lemon slices and blueberry compote.
