Dairy Free Peppermint Creams

You'll need: chocolate chips, vegan butter, powdered sugar, refined coconut oil, peppermint extract, non-dairy Baileys or non-dairy milk

Step 1: Add the dairy-free chocolate chips and refined coconut oil to a small saucepan and heat on low heat, stirring often...
...until it's almost completely melted. Then, remove from heat and stir vigorously until you're left with a thin chocolate liquid like this.
Step 2: Use a stand or hand mixer to combine the remainder of your ingredients to make the peppermint cream filling.
Step 3: Use your hands to form the filling into patties like this and place in the freezer until firm, about 5-15 minutes.
Step 4: Once solid, use a fork or slatted spoon to dip each peppermint patty in the melted chocolate, coating it completely. Return to the freezer.
When firm, remove the chocolate peppermint creams from the freezer and enjoy!
Store in the fridge or freezer for best results!
