Creamy Vegan Vegetable Spread

You'll need: extra firm tofu, lemon juice, refined coconut oil, water, salt, and a vegan-friendly veggie soup mix.

Step 1: First, you'll add all the vegan ingredients to a food processor or Vitamix, starting with the tofu and ending with the melted refined coconut oil.

Step 2: Then, blend the ingredients, starting on low and slowly increasing speed to high, for 3-5 minutes until the mixture is creamy and shiny. The shiny part is key!

Step 3: Next, you'll transfer this mixture to a large mixing bowl

Step 4: Add the veggie soup packet and whisk until everything is totally combined and there are no more spice chunks from the soup packet.

Let the mixture chill / firm up overnight and serve this creamy vegan vegetable spread on bagels, sandwiches, toast, or with veggies for an appetizer or snack board!
