Creamy Dijon Veggie Casserole

You'll need: squash, zucchini, carrots, potatoes, soy curls, water, maple syrup, dijon mustard, vegan condensed cream of potato, bouillon powder, non-dairy milk, vegan cheese shreds

We use our homemade vegan condensed cream of potato for this recipe. It's so easy to make!

Step 1: Stir together all the ingredients in a 3-quart casserole dish until totally combined.
Step 2: Cover the casserole dish tightly with aluminum foil or an oven-safe lid.
Step 3: Bake the dijon veggie casserole, covered tightly, for 40 minutes. Then, remove the cover (it will look like this)...
...and bake another 20 minutes without its cover. When it's done it will look like this - beautifully golden brown on the top and smelling fantastic!
Let the creamy dijon veggie casserole sit 10 minutes (covered once again) before serving and enjoying!
