Buffalo Tofu Nuggets

We love using their unsweetened cashew milk to make a vegan buttermilk marinade in this recipe!

You'll need: extra firm tofu (frozen and thawed), Elmhurst® unsweetened cashew milk, tapioca starch, hot sauce, olive oil, spices, bread crumbs, lime juice, agave, ACV, bouillon powder

Step 1: Mix all the ingredients for your buffalo tofu nugget marinade in a small bowl with a small whisk or fork.

Step 2: Marinate the tofu nuggets in this spicy buffalo marinade for at least 1 hour or overnight, covered, for even more flavor.

Step 3: Remove the tofu from the marinade and place it on a cutting board. Save the marinade because next, you're going to...

Step 4: Add the Elmhurst® unsweetened cashew milk to the spicy buffalo marinade...

...and pick up the baking dish / swish it around with your hand to combine everything.

Step 5: Then, set up your breading station. From left to right: tofu nuggets, tapioca starch, plant milk / marinade mixture, and breadcrumbs

Step 6: Coat each tofu nugget completely in first, the tapioca starch. You can use corn starch if you don't have tapioca! 

Then, coat the buffalo tofu nuggets in the vegan buttermilk / spicy marinade mixture.

And finally, coat each tofu nugget fully in the bread crumbs mixture. 

Step 7: Arrange the buffalo tofu nuggets in your air fryer basket and cook them for 20-30 minutes until crisp and browned.

Step 8: Then, add them to a large mixing bowl and pour on the spicy vegan buffalo sauce. Toss the buffalo tofu nuggets in the sauce until evenly coated for extra flavor.

Serve buffalo tofu nuggets with dairy-free bleu cheese dip for game day, Super Bowl party, or movie night snacks!

You can use any of Elmhurst's unsweetened milks for this recipe: cashew, oat, almond, even walnut!

They have a super neutral flavor, so you get no weird "sweet" taste in your savory dishes!
