5-Ingredient Vegan Key Lime Pie

You'll need: soft tofu, key lime juice, melted refined coconut oil,  organic powdered sugar, and a vegan-friendly pre-made graham cracker crust

Step 1: Add all the filling ingredients (everything except the crust!) to a Vitamix or other high-powered blender.

Step 2: Blend the tofu filling on high for 1-2 minutes until the mixture is creamy and shiny! The shiny part is important.

Step 3: Pour the key lime pie filling into the pre-made pie crust and transfer to the fridge to chill overnight.

After chilling 5-8 hours in the fridge, the pie will be firm and sliceable. Serve with lime slices and graham cracker crumbs!
